Triple Green Salad

In this salad, green is the color of flavor and nutrition. Peppery arugula harmonizes with smooth avocado and the sweetness of fruit. You won’t even think about all the fiber and nutrients you’re eating!


Triple Green Salad

Serves: 4


  • 4 cups arugula or other leafy greens mix
  • 1 medium avocado, peeled and cubed
  • 2 small kiwis, peeled, halved and sliced
  • 1 Tbsp rice vinegar or other sweet white vinegar
  • 1 Tbsp honey mustard
  • 1 tsp black sesame seeds


1. In a large bowl, toss together the first 3 ingredients.
2. In a small bowl, whisk together the remaining ingredients.
3. Pour dressing over salad. Serve immediately.

Seasoned Cook

Substitute sesame seeds with sunflower, chia or flax seeds to maintain a crunchy texture and fiber.
